Lazy Girls Easy Christmas Mince Pies - With A Twist!

No Mary Berry? No worries! Here's a festive mince pie recipe with a twist that requires little or no effort, tools or skill but all the kudos!

You will need:
Ready Made Shortcrust Pastry
Jar of Mincemeat

Mixing Bowl
Rolling Pin
Pastry Brush
Greaseproof Paper Lined Baking Tray

Remove your pastry from the fridge and allow it to reach room temperature. Whilst doing this you can dust your work surface & rolling pin with flour (this helps prevent the pastry from sticking) & preheat your oven to 180oc

Roll out your pastry to the thickness of a 50p piece.

Open your jar of mince meat and spoon a generous layer over the top of your rolled pastry, leaving a 1.5cm gap around the edges.

Now whisk your eggs, mixing the yolk and whites together

Carefully begin to roll your pastry, slightly patting the top as you go to spread the mixture evenly across your roll.

Just before you complete your roll, egg wash the end of the pastry to act as a glue and keep your roll in place, and trim the ends.

Transfer to a greaseproof paper lined baking tray and egg wash the entire roll.

Pop in the oven for around 20 minutes, remove then leave to cool.

Cut into your roll, dust and serve your mince pie slices - lashings of cream optional!
